How to make stuffed cabbage

During the cooler season, you’d see a lot of these being sold in supermarkets and in mercati. They are pretty cheap to get these times, costing about 1 – 1.5 euro a kilogram.

This is called Verza. Also known as a savoy cabbage, it’s pretty much like a regular cabbage, but it has a deep green hue and a bubbly texture. It looks so cool doesn’t it?

Anyway, one great recipe to make out of this is Involtini di verza – stuffed cabbages. I used the recipe here, but made some changes to fit our dietary constrictions. Nevertheless, it’s so yummy that I hope that you’d try them too! (I’m pretty sure it’ll work fine with regular cabbages also)

First boil some water and carefully peel out 12 leaves. Rinse and clean them and then slice away the hard stem. Then dip each one in the boiling water for about 1 – 2 minutes to soften them.

After that you’ll get a dozen floppy verza leaves which will be ready for wrapping. Chop the rest of the unboiled cabbage into small pieces and set it away for the risotto.

Next, finely chop some celery, carrot and onion – this is probably the base of most Italian cooking.

Heat some butter (yes butter!) and olive oil in a pan and fry the soffrito.

When it’s sufficiently softer and glazed, thrown in some rice. (about 300gr or so) It’s best to use carnaroli or arborio or whichever rice which is good for risotto. (Not sure if Basmati or Thai rice is good for this. I don’t plan to experiment!)

Toast the rice in the sofritto for about 5 – 10 minutes or so. And in the meanwhile, boil 1 litre of vegetable broth. We just use those cube stocks.

In the original recipe, you’d use white wine. But we substituted it with tiny bit of balsamic vinegar. You could also add some minced meat or chopped sausages in but we’re leaving that out for a vegetarian version πŸ™‚

Now add the broth slowly and stir constantly but leave about one ladle worth of broth in the original pot for spreading in the oven dish.

And now we add the chopped cabbage! (By the way if there are extra because the cabbage was too big, you could turn them into salad πŸ˜› )

Nevertheless, cabbage shrinks (and the rice expands) quickly in heat.

Wow, look at that. It looks like a soupy cabbage soup that I used to eat as a kid. If I cracked an egg, add some su’un and dried lily buds, I think I could even eat it straight away like this.

But we are making this into risotto! So we stir and wait till the rice is almost cooked and at this point we add some grated parmigiano cheese, give a stir and turn off the stove.

While the risotto is still warm, Cart also added some chopped up smoked scamorza cheese for an extra smoky taste.

You could omit this if you don’t have access to scamorza. But it makes the risotto extra cheesy and gooey when you pull it. Like those pizza commercials.

Uh oh! The rubbish bin! SO UNGLAMOROUS! Nevertheless, pour the last ladle of broth in the oven dish. And preheat the oven to 200 degrees C.

And now the fun part! We take each leaf …

Put about two spoonfuls of the risotto on top of each leaf …

And wrap it up as snugly as possible. This sort of reminds me of making spring rolls. Yummy! Look at my beautiful involtino!

You should have enough risotto for 12. And after you’re done rolling all 12, spread the top with some melted butter …

And then sprinkle it with some more grated parmigiano.

Now leave it in the oven for about 15 minutes and then after that set it to grill for another 5 minutes. Take it out and leave it to rest for a few more minutes before eating them.

And believe me, they are absolutely yummy! I’ve never been that big on eating cabbages, but it’s a wonderfully hearty meal during cold days, so I hope that you try them!

Quite the drama in my neighbourhood

And so, on the second day that Cart was away, I thought that I’d spend some time with my friend. The original plan was to spend some time at some bancarelle perhaps in the center. But we found out later that there was a violent rioting going on. We didn’t want to risk being in the crossfire, so we pretty much just hanged out in her neighbourhood.

Anyway, when I reached home close to 7pm, and as I parked my car, I stepped out and I noticed that there was a bit of liquid running across the road.

Odd” I thought to myself, “It didn’t rain the entire day. There must be a broken water pipe somewhere” And I promptly walked to the apartment.

About an hour later, I got a call from my in-laws who happened to be in the area (they had a friend living in the apartment across us, to whom they visit regularly) and my MIL urgently told me to go down.

And that’s when I saw this which shocked me.

It wasn’t a lot of liquid. But considering that it didn’t rain the entire day, and that the level of liquid was getting higher on the tyres of my car worried me. MIL adviced me to park the car up higher grounds and which I did, hurriedly. There were a number of people already who had the same idea as I had.

When I found an empty spot, it was a bit of walk back home, more than usual. Nevertheless, I crossed my fingers.

Funnily enough, I was thinking, “This is rather cool!” And yet, was feeling worried at the same time. Don’t go any higher please!

And then in the morning at about 7am, this was what I saw. You could hardly see the zebra at all! And our walking path looks like the start of a swimming pool.

I’m glad that I moved my car (Cart’s car was parked in a relatively safe spot behind) And I was really hoping that it doesn’t go any higher. I mean, reading about the news of the flooding in Venezia was alarming enough, and also of Ponte Milvio as well as Fatebenefratelli which are both in Rome but I never expected that my neighbourhood would be hit too.

I took a walk outside to check out the situation. There are some areas which I couldn’t even traverse in my rain-boots. It was that high!

And there were a few roads which were closed due to the … ahem … ponding. You could just imagine the traffic situation with cars conglomerating together, honking impatiently, wondering where to turn to exit to.

Thankfully, in the afternoon, the water started to recede and by after lunch time, all the flooding went away. Leaving only traces of muddy sediments.

What an eventful day! Funny thing is when I picked Cart up at the airport last evening, he quipped, “Oh no! I missed it!

The funny bit is that Cart has to be out of Rome again next week. And I’m trying not to get paranoid 😐

Suddenly I feel like a bachelorette

So … Cart had to be out of town for work for three days, and I dropped him at the airport early yesterday morning. And suddenly I feel like a bachelorette again. Hahaha!

Don’t get me wrong, while I do miss him, I’m surprised at how err … relaxing it feels.

Starting off with driving back home. After all the years of going to school early morning, made me appreciate travelling at this time. This was the time to reflect and you think to yourself that a new day is starting and new adventures await you. And I felt so tranquil going down the highway with hardly any other drivers and greeted by the glorious golden sun rising past the purples and blues.

And when I reached home, I finally managed to rearrange most of Cart’s stuff like laundry, comics and whatnots that has been lying around and polluting my eyes. But whenever I try to move it, he’d complain and say, “No! Let me deal with it!” But gets distracted and forgets about it for weeks straight. Well, he’s not here to stop me now :p

After that, it motivated me to do a lot of other things. When I was done, looking at the clock, I was surprised at how much chores that I managed to accomplish, before Cart normally leaves for work. I normally don’t like to do housework when there is anyone around because I tend to find them to get in the way.

Anyway! Following that, I went on my regular Tuesdays routine like going jogging (by the way, I intend to participate in a half marathon come Feb next year. Anyone wants to join me? Do you think I’d be ready by then?) and then cooking a carnivour’s lunch (Cart’s vegetarian) and then tutoring in the evening.

But I think it’s more in the evening that I feel his absence most felt, as he’d be home at this time and we’d have dinner together and then have a cuddle in front of the TV. I’d faint on the sofa by the time the clock strikes 10 and the next thing I’d remember would be Cart waking me up to drag me to bed at 3 am. In that state of confusion, sometimes I don’t even brush my teeth and wash my face. Such a bad habit I started since we got married!

And so last night, it was such a proud moment for me (not such a spectacular accomplishment, BUT STILL!) to be able to wash, tone and moisturise then brush my teeth and put on my pyjamas and be in bed around 11 pm.

But the house was eerily quiet. Growing up in a family of 6, I’ve never had the experience of spending the night completely alone. And I get a little paranoid after watching horror shows like The Ring some years back. Moreover, I sometimes suffer from sleep paralysis which can be unnerving. So I just switched on some online radio, tuned in to Food Paradise on the netbook (to simulate the telly, which tends to lull me to sleep) and hoped for the best.

Well, I managed to get some sleep. And now I’m up blogging and in a while, I’m off for today’s adventures … pretending I’m a bachelorette :p

Update : Turns out that my plan of exploring had to be postponed as there were violent rioting going on … PLUS the flooding from Venice is starting to affect Rome too. YIKES!

Ohai! Like my hair? :-)

This post is going to be a little narcissistic, but it’s my blog and I can do what I want with it (moreover, I’m not sure what to blog for today, so this post is a sort of filler I guess)

Anyway, I’m quite a fan of X Factor Italia, ever since I first watched it. And last week, one of the contestants was singing an Amy Winehouse song. I didn’t really fancy how he sang it, but nevertheless I’ve always liked Amy’s voice and songs (and I think it’s such a waste of what happened to her) so from there, it was a catalyst for me feeling so inspired that I had the intense desire to dress up like her.

So there I was early Sunday morning busily spraying my hair with hair spray, trying to pouf it as big as I could (wasn’t easy as my hair wasn’t that long) and when I was done, giggled like crazy and jumped to a surprised Cartcart to say, “Tadah!

I have to say, I’m thankful to have such an open minded husband. As luckily for me, Cart didn’t laugh or thought I was crazy (but it was possible :p) Instead, his reaction was, “Cool!”

Anyway, if you’re interested in getting this look, the hair I used this tutorial (the sock bun is a great idea!) and the eyeliner from this tutorial. I didn’t want to fuss with tying a scarf so I used an usagi hairband. Easy peasy lemon squeezy!

I quite like this look, I think I could even go out in public like this. Heheheh πŸ˜€

My Winter elixirs

As we move towards the middle of Autumn, the colder temperature tends to make my skin dryer than usual. Here are a couple of potions that I keep in the bathroom cabinet to ease me through the colder weather

1. Provenzali Olio di Mandorle

Also known as sweet almond oil, this was something that I got on a whim. It was on an offer for about 5 euro, but turned out to be a holy grail for me. It does so much good for me, much more than regular body creams.

As I have sensitive skin, I’m amazed at how fast it helps to heal the scratch marks on my skin and when rubbed into my nails, it tends to make them grow much faster. The good thing is that it doesn’t make me feel sticky, and true to it’s claim, even after 24 hours, my skin doesn’t get that white mark when you do a scratch test.

Each bottle takes about 3-4 months to use (and I use it very liberally) and I’m just about to start using my second bottle now (the magnolia scented one). They both smell so gorgeous!

2. Ambrosia Multi Tasking Serum by Lucy Minerals

This is not the best pictorial as you can see, as the words have faded off and there’s just a teeny bit left, which is just enough for one last use. You could search for a better picture online.

Anyway, this was very helpful to me during the winter. But at 28 USD (minus shipping) it wasn’t cheap. So to make it last longer and also for an additional moisturization benefits, I liked mixing this with my body lotion. Or I put it neat on my nails and at the tips of my hair for additional conditioning.

3. Leocrema Mani e Unghie con Cheratina e Vitamina E

At first I thought of this as a pirate for the memorable Nivea brand.

Nevertheless, during the coldest winter, my nails tend to crack and chip a lot. So in dire straits, I got this tube for myself. It was practically the only drug store hand cream that contains keratin and the fact that it was relatively cheap, costing less than 3 euro each was what sealed the deal.

I have to say that it helps a great deal! Using this on a regular basis, I don’t get that horrible tip chip and my hands don’t look like it had freezer burns.

4. Olioseta Cristalli Liquidi

This hair oil was part of something that Jess gave me in her loot. I’ve been using this for some months now, and I like it very much.

I pump about 4 times into my palm and spread it all over my hair. It has a fresh, luxurious scent that I love and seems to calm my hair down, making it a lot more softer and more manageable.

After going to the Trastevere branch, I was happy to know that there was a branch nearer to our home in Eur. So Cart and I were there practically each Sunday the past 3 weeks to enjoy their cakes and pastries.

Each time the lady at the counter kept staring at me dubiously. But, you know, after living in Rome for several years, I’ve learnt not to keep it to heart. After all, the important thing is that I get my beloved cream pastries.

So lets say the biggest reasoning is that they are scared that I could be a potential rival and steal their designs, what could stop an actual rival from going there, buy something, bring it back to the kitchen and try to recreate it from their own kitchen?

And I’m not talking only about the small pastry shops, even the big-chain fast food restaurants like Mcdougals are so protective of their menu. A staff stopped me from taking a picture of the huge queue in front of the counter with the reasoning that they are protecting the menu (at least she was apologetic and kind about it)

I like sharing pictures of things that I find beautiful and it’s a plus if it’s food and is delicious. It’s like a word of mouth publicity, no?

Which is why I do not understand why there are still people who still are so protective that their merchandise being photographed (It’s like almost every other month, where ever I go, a shop would do that) But the more I am chided, the less I feel like going there as a customer. But it’s not like they will lose business from one client. And not as if I’m such a femes blogger to make a significant change (kind of tempted to make a flash mob going here with EVERYONE taking pictures) but still …

Hello world! (that’s what we always had to type in beginning programming classes)

If you manage to read this, congratulations! We’ve made it! Marina’s Bloggariffic has migrated to a new home. While I still have about 3 more weeks with the old host, but then I thought to myself, “Why wait?” and went ahead and moved last weekend.

As it takes up to 48 hours for the nameserver and DNS to stabilize, it was pretty wonky the past few days, which was why the blog kept switching back and forth from the old template to the new. It was so intermittent to the point that I couldn’t even log in, so I pretty much just let it do its thing.

I’m currently using budgethosting, recommended by my friend, Ed Rowan Lee. So far, so good. The person that has been handling my account has been really helpful and professional. I’m currently paying 30 SGD hosting + 15 SGD domain yearly, so it’s a lot more economical compared to my previous hosting.Β In fact, I could probably cover the hosting with adsense come next year, making this site self sufficient.

I’m not sure if the package is enough for me for the moment, but lets see for now. At this point of time, I’m uploading about 8 years of material online and am already hitting 25% of my 5GB space.

I’m still a little upset that at this point of time that for my previous host, new users get to pay 3.95 USD a month while longtime users like me are charged 7.99 USD a month (I kid you not) It doesn’t seem fair but ah well, onwards and upwards!

I guess I should apologize for tricking a lot of you into thinking that I’m quitting from blogging, but I’m surprised that no one picked up on how I worded my previous post. I think I wrote something like, “As I have no intention of renewing with bluehost, my last post here will be on the 25th November.” “Here” meaning bluehost, not the blog. You’ve been pranked! Hehehe! P.s I’m really digging this new plugin by wordpress called Jetpack. It’s awesome! You could could do stuff like embed social media sharing, set mobile theme, set contact form and what nots. While previously I had to install a separate plugin for each. So beautiful!

Suddenly we went back in time

Yesterday, we stopped having daylight savings time and we went back an hour. This always confuses my inner clock.

So when I woke up yesterday, thinking that it was 7 am, alarmed at how it was rather bright outside, (I try to wake up before sunrise) momentarily confused when I saw that it was only 6 am on my phone.

And then when getting out of the house, everything feels strange. It’s like, my brain is telling me that it’s this o’clock. But my heart is saying this isn’t right. Going out for lunch, for example. I normally get hungry by noon, thus I kept thinking to myself, “Why are we eating so much later than usual?

And while Autumn is absolutely beautiful with the leaves starting to turn yellow and red and brown, the bad thing about it is how the days start to get so short. I detest how DUSK starts to be around 5 pm now! I don’t know if I willΒ ever get used to this.

I’m not sure even why we have DST. It seems so much more of an inconvenience twice a year.

Sidenote : I find it interesting now that I have my Nexus, I hardly carry my pnp camera with me anymore.
